Description

A refreshing salad combining crunch from cucumbers with sweet corn and tender rotisserie chicken, all dressed in a creamy lime-infused sauce.


Ingredients

  • 1 1/2 English cucumbers (halved and sliced, about 3 cups)
  • 2 cups rotisserie chicken (chopped)
  • 1/4 cup cilantro (minced)
  • 3 green onions (sliced)
  • 1 jalapeño (seeded and diced)
  • 1/4 red onion (diced)
  • 1/2 red bell pepper (seeded and diced)
  • 15.25 oz can sweet corn (drained)
  • 1/2 cup plain Greek yogurt (2% or higher for creaminess)
  • 1/3 cup mayonnaise
  • Juice and zest of 1 lime
  • 1 clove garlic (finely minced or grated)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt and freshly cracked pepper

Instructions

  1. Prepare the cucumbers: Lay the cucumber slices in a single layer on paper towels. Top with another layer of paper towels and press down to absorb moisture. Let them sit while you prepare the rest of the ingredients.
  2. Make the dressing: In a medium bowl, combine the Greek yogurt, mayonnaise, minced garlic, lime juice and zest, chili powder, paprika, cumin, salt, and pepper. Whisk until smooth. Taste and adjust seasonings as desired.
  3. Combine ingredients: In a large mixing bowl, add the prepared cucumbers, sweet corn, chopped chicken, cilantro, green onions, jalapeño, red onion, and red bell pepper.
  4. Mix it up: Pour most of the dressing over the ingredients and gently fold with a spatula until everything is evenly coated. Use the remaining dressing if you prefer a creamier salad.
  5. Chill and serve: Serve immediately or chill in the fridge for an hour to let the flavors meld.

Notes

For extra crispness, make sure to thoroughly dry the cucumbers after salting. Adjust the jalapeño based on your spice tolerance.
