Ingredients

Scale
  • 4 chicken thighs
  • 4 oz cream cheese (softened)
  • 1 cup fresh spinach (chopped)
  • 1 tablespoon olive oil

Instructions

  2. In a medium bowl, combine the cream cheese, chopped spinach, garlic powder, onion powder, salt, pepper, and herbs. Mix until well incorporated.
  3. Gently lift the skin of each chicken thigh, creating a pocket, and stuff it with the cream cheese mixture.
  4. Rub the outside of each thigh with olive oil and season with additional salt, pepper, and herbs as desired.
  5. Place the stuffed thighs in a greased baking dish and bake for 30 to 35 minutes or until they are cooked through and the skin is golden brown.
  6. Allow the chicken to rest for a few minutes before serving. Enjoy your delicious stuffed chicken thighs!

Notes

For best results, use a meat thermometer to ensure the chicken reaches 165°F (74°C). Feel free to customize your filling with different herbs or cheeses.
