- 1 cup fresh spinach (chopped)

Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the cream cheese, chopped spinach, garlic powder, onion powder, salt, pepper, and herbs. Mix until well incorporated.
- Gently lift the skin of each chicken thigh, creating a pocket, and stuff it with the cream cheese mixture.
- Rub the outside of each thigh with olive oil and season with additional salt, pepper, and herbs as desired.
- Place the stuffed thighs in a greased baking dish and bake for 30 to 35 minutes or until they are cooked through and the skin is golden brown.
