- 4 medium sweet potatoes
- 2 cups apples, diced (Granny Smith works wonderfully)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon brown sugar
- 1/4 cup maple syrup
- 2 tablespoons butter
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pierce them with a fork.
- Place them on a baking sheet and bake for 45-60 minutes until tender.
- In a skillet, melt the butter over medium heat.
- Add the diced apples, followed by cinnamon, nutmeg, and brown sugar. Cook until the apples soften, about 5-7 minutes.
- Once the sweet potatoes are cooked, let them cool slightly and slice them open lengthwise.
- Scoop out a bit of the sweet potato flesh to create space for the filling.
- Fill each potato with your spiced apple mixture, then drizzle maple syrup over the top.
- Return to the oven for an extra 10 minutes.
- Serve warm and enjoy!
