			- 1/2 cup unsalted butter (at room temperature)
 - 1 cup granulated sugar
 - 1 large egg (at room temperature)
 - 1 1/2 teaspoons vanilla extract
 - 1/4 teaspoon almond extract
 - 1 3/4 cups all-purpose flour
 - 1/2 teaspoon salt
 
Instructions
- Cream the butter and sugar in a stand mixer until just combined.
 - Add the egg and extracts, beating until mixed thoroughly.
 - Add flour and salt, mixing until no streaks of flour remain visible.
 - Chill the dough in a flat disk wrapped in plastic wrap for at least an hour.
 - Preheat the oven to 350°F and line baking sheets with parchment paper.
 - Roll out the dough on a floured surface and cut out shapes.
 - Bake for 8 to 12 minutes, depending on size.
 - Allow cookies to cool on a wire rack before serving.

For longer freshness, store in an airtight container for up to a week or freeze for up to three months.
