Ingredients

- 1 cup butter (2 sticks, at room temperature)
- 1 cup sugar
- 1 egg
- 1–2 tsp lemon zest (zest from 1/2 a lemon)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 3 cups flour (plus more for rolling)
- 1/2 tsp salt
Instructions
- In your stand mixer, combine the room-temperature butter and sugar. Beat for about 3 minutes until well creamed.
- Scrape the sides of the bowl and add the egg, lemon zest, baking powder, and vanilla extract. Beat for 2 minutes until you achieve a creamy yellow mixture.
- Gradually add the flour and salt, mixing on low speed for about 2 minutes until the dough is crumbly.
- If the dough doesn’t come together, add a teaspoon of water and mix by hand.
- On a floured surface, roll out the dough to your desired thickness. Cut out shapes and place them on a parchment-lined baking sheet.
- Freeze the baking sheet for about 10 minutes.
- Preheat your oven to 350°F (175°C).
- Bake the cookies for 10 minutes or until the edges turn slightly golden.
- Let them cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to one week, or freeze for up to three months.
