Ingredients

  • 1 cup butter (2 sticks, at room temperature)
  • 1 cup sugar
  • 1 egg
  • 12 tsp lemon zest (zest from 1/2 a lemon)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 3 cups flour (plus more for rolling)
  • 1/2 tsp salt

Instructions

  1. In your stand mixer, combine the room-temperature butter and sugar. Beat for about 3 minutes until well creamed.
  2. Scrape the sides of the bowl and add the egg, lemon zest, baking powder, and vanilla extract. Beat for 2 minutes until you achieve a creamy yellow mixture.
  3. Gradually add the flour and salt, mixing on low speed for about 2 minutes until the dough is crumbly.
  4. If the dough doesn’t come together, add a teaspoon of water and mix by hand.
  5. On a floured surface, roll out the dough to your desired thickness. Cut out shapes and place them on a parchment-lined baking sheet.
  6. Freeze the baking sheet for about 10 minutes.
  7. Preheat your oven to 350°F (175°C).
  8. Bake the cookies for 10 minutes or until the edges turn slightly golden.
  9. Let them cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
