  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha or other hot sauce
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • Cooked quinoa or noodles, for serving
  • Chopped cilantro, for garnish

Instructions

  1. In a skillet, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through (about 5-7 minutes).
  3. While the chicken cooks, whisk together the soy sauce, honey, sriracha, garlic, and ginger in a small bowl.
  4. Pour this flavorful sauce over the chicken, then toss in the bell pepper and broccoli.
  5. Stir well to combine and allow everything to cook for an additional 5 minutes, until the vegetables are tender.
  6. Serve the chicken over a bed of warm quinoa or noodles, topped with fresh chopped cilantro for that lovely finishing touch.

Notes
