Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 cup breadcrumbs (gluten-free if needed)
- 1/2 cup black beans, rinsed and mashed
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- Oil for frying
Instructions
- Boil the diced sweet potatoes in water until they are tender, about 15-20 minutes. Drain and let them cool.
- In a mixing bowl, mash the cooled sweet potatoes. Stir in the black beans, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper until well combined.
- Shape the mixture into patties, about 1/2 inch thick.
- Heat oil in a frying pan over medium heat. Fry the patties for 4-5 minutes on each side until they are golden brown.
- Serve warm, optionally on a bun with your favorite toppings.
