Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 cup breadcrumbs (gluten-free if needed)
  • 1/2 cup black beans, rinsed and mashed
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • Oil for frying

Instructions

  1. Boil the diced sweet potatoes in water until they are tender, about 15-20 minutes. Drain and let them cool.
  2. In a mixing bowl, mash the cooled sweet potatoes. Stir in the black beans, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper until well combined.
  3. Shape the mixture into patties, about 1/2 inch thick.
  4. Heat oil in a frying pan over medium heat. Fry the patties for 4-5 minutes on each side until they are golden brown.
  5. Serve warm, optionally on a bun with your favorite toppings.
