Description

Ingredients

  • 1 pound sweet potatoes
  • 1 cup all-purpose flour (plus more if needed)
  • ½ teaspoon salt

Instructions

  1. Cook the Sweet Potatoes: Prick the sweet potatoes with a fork and microwave for 7 to 10 minutes, or until tender.
  2. Mash: Once cooked, cut them in half, scoop out the flesh, and mash it in a bowl until smooth.
  3. Mix: Add flour and salt to the mashed sweet potatoes. Use a spoon to mix them initially, then switch to your hands until well combined.
  4. Knead: Transfer the dough to a lightly floured worktop and gently knead for about a minute.
  5. Shape: Cut the dough into 4 equal pieces, roll each into long ropes, and cut into small squares. Optionally, create ridges on each piece.
  6. Cook: Boil a large pot of salted water. Once bubbling, add the gnocchi and cook for 1 to 2 minutes, or until they float.
  7. Serve: Remove with a spider or slotted spoon and toss in your favorite sauce.

Notes

You can substitute the all-purpose flour with a gluten-free blend. Sweet potatoes can also be roasted for deeper flavor. Store in an airtight container; leftovers can be kept in the refrigerator for up to 3 days.
