Description

Ingredients

  • 1 cup cooked chicken, shredded
  • 2 cups corn (fresh, canned, or frozen)
  • 1 cup cooked quinoa or rice
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine the shredded chicken, corn, quinoa (or rice), black beans, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
  3. Drizzle the dressing over the chicken and corn mixture. Toss everything together gently to combine.
  4. Serve immediately, or transfer to a container for meal prep!

Notes
