- 1 cup cooked chicken, shredded
- 2 cups corn (fresh, canned, or frozen)
- 1 cup cooked quinoa or rice
- 1 cup black beans, rinsed and drained
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine the shredded chicken, corn, quinoa (or rice), black beans, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
- In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
- Drizzle the dressing over the chicken and corn mixture. Toss everything together gently to combine.
- Serve immediately, or transfer to a container for meal prep!
Notes
For serving, try adding crumbled queso fresco or Greek yogurt. Store leftovers in an airtight container in the fridge for up to three days.
