  • 1 cup sweet corn kernels (grilled, sautéed, or frozen)
  • 1/4 cup sliced red onion
  • 1/2 cup sour cream (plus some for garnish)
  • 2 tbsp mayonnaise
  • 1/2 cup crumbled Cotija cheese (extra for topping)
  • 3 cups prepared rice
  • Fresh cilantro leaves (for garnish)
  • Lime wedges (for squeezing on top)

Instructions

  1. In a bowl, whisk together the lime juice, avocado oil, chili powder, ground cumin, garlic powder, salt, and black pepper.
  2. Toss the chicken thighs in the marinade until they are fully coated. Cover and refrigerate for 15 to 30 minutes.
  3. Heat a skillet over medium-high heat. Sear the marinated chicken thighs for 8 to 10 minutes on each side until golden brown and cooked through. Let the chicken rest for 5-10 minutes.
  4. In a separate bowl, mix together the sweet corn, sliced red onion, sour cream, mayonnaise, Cotija cheese, and a dash of chili powder. Season with salt, pepper, and lime juice to taste.
  5. Heat the prepared rice in a microwave-safe bowl with a splash of water until fluffy and warm, approximately 2 minutes.
  6. In serving bowls, divide the rice, top with sliced chicken, and add the corn mixture. Finish with Cotija cheese, fresh cilantro, and lime wedges.
