  • 4 boneless, skinless chicken thighs
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder or 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup sweet corn kernels (grilled or sautéed from frozen)
  • ¼ cup sliced red onion
  • ½ cup sour cream, divided
  • 2 tablespoons mayonnaise
  • ½ cup crumbled cotija cheese, plus extra for topping
  • 1 teaspoon chili powder (for topping)
  • Salt and pepper, to taste
  • 1 tablespoon lime juice (to taste)
  • 3 cups prepared rice
  • Fresh cilantro leaves, for garnish
  • Lime wedges (from 1 lime)
  • Reserved sour cream and cotija cheese, for garnish

Instructions

  1. Marinate the chicken thighs in a bowl with lime juice, avocado oil, chili powder, cumin, garlic powder (or fresh garlic), salt, and black pepper. Cover and set aside for at least 15 minutes.
  2. Prepare your rice according to package instructions.
  3. In a skillet over medium heat, cook the chicken until browned and cooked through, about 7-10 minutes per side. Let it rest for a few minutes before slicing.
  4. Add sweet corn to the same skillet and sauté until heated through and slightly charred if using frozen corn.
  5. Layer the rice, followed by sliced chicken, corn, red onions, sour cream, and mayonnaise in a bowl. Sprinkle with cotija cheese, and add additional chili powder, salt, or pepper to taste.
  6. Garnish with fresh cilantro leaves, lime wedges, and extra sour cream or cotija if desired. Enjoy!
