- 4 pieces Chicken Breasts (thinly sliced, boneless, skinless)
- 2 cups Fresh Spinach (kale or Swiss chard works too)
- 1 cup Parmesan Cheese (Pecorino Romano is a nice substitute)
- 2 cloves Garlic (minced)
- 1 cup Italian Breadcrumbs (regular breadcrumbs or crushed crackers can do)
- 2 tablespoons Olive Oil (or vegetable oil)
- 1 can Crushed Tomatoes (fresh tomatoes are also an option)
- Herbs (optional) – Fresh basil, oregano, or parsley to taste
Instructions
- Prep the filling: In a bowl, combine spinach, Parmesan cheese, and minced garlic. Mix well.
- Prepare the chicken: Take a thinly sliced chicken breast and lay about a generous spoonful of the spinach mixture in the center. Roll it up tightly and secure with toothpicks.
- Sear the chicken: Heat olive oil in a skillet over medium heat. Add the chicken rolls and sear until golden brown on all sides, about 3-4 minutes.
- Simmer with sauce: Pour crushed tomatoes over the chicken in the skillet. Lower the heat, cover, and let it simmer for about 20 minutes until the chicken is cooked through.
- Serve and enjoy: Remove from heat, let it rest a few minutes, then serve hot.
Notes
Store leftovers in an airtight container for up to three days in the refrigerator or freeze for up to three months.
