Description

A comforting Italian dish featuring chicken breasts rolled with spinach, Parmesan, and garlic, then braised for a tender finish.


Ingredients

  • 4 pieces Chicken Breasts (thinly sliced, boneless, skinless)
  • 2 cups Fresh Spinach (kale or Swiss chard works too)
  • 1 cup Parmesan Cheese (Pecorino Romano is a nice substitute)
  • 2 cloves Garlic (minced)
  • 1 cup Italian Breadcrumbs (regular breadcrumbs or crushed crackers can do)
  • 2 tablespoons Olive Oil (or vegetable oil)
  • 1 can Crushed Tomatoes (fresh tomatoes are also an option)
  • Herbs (optional) – Fresh basil, oregano, or parsley to taste

Instructions

  1. Prep the filling: In a bowl, combine spinach, Parmesan cheese, and minced garlic. Mix well.
  2. Prepare the chicken: Take a thinly sliced chicken breast and lay about a generous spoonful of the spinach mixture in the center. Roll it up tightly and secure with toothpicks.
  3. Sear the chicken: Heat olive oil in a skillet over medium heat. Add the chicken rolls and sear until golden brown on all sides, about 3-4 minutes.
  4. Simmer with sauce: Pour crushed tomatoes over the chicken in the skillet. Lower the heat, cover, and let it simmer for about 20 minutes until the chicken is cooked through.
  5. Serve and enjoy: Remove from heat, let it rest a few minutes, then serve hot.

Store leftovers in an airtight container for up to three days in the refrigerator or freeze for up to three months.
