- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese (or cheddar)
- 2 tablespoons olive oil
- 2–3 cloves of garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil over the chicken breasts, then season generously with salt and pepper.
- In a heated skillet over medium-high, sear the chicken for about 5 minutes on each side until golden brown.
- Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Pour the chicken broth into the pan, scraping up any bits stuck to the bottom, and allow it to simmer.
- Stir in the sour cream, mixing well until it bubbles.
- Top each chicken breast with shredded Jack cheese.
- Transfer the skillet to your preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
- Finish off with a garnish of chopped green onions and a sprinkle of paprika before serving.
Notes
Let leftovers cool before storing in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for longer storage.
