- 1 cup shredded Jack cheese (or a cheese of your choice)
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper, to taste
- Chopped green onions and paprika for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the chicken breasts with olive oil and season generously with salt and pepper.
- In a skillet over medium-high heat, sear the chicken until golden brown on both sides—about 5 minutes per side.
- Add minced garlic to the skillet and cook for 30 seconds, just until fragrant.
- Pour in the chicken broth and allow it to simmer while scraping up any bits from the bottom of the pan.
- Stir in the sour cream and let the mixture bubble for about 5 minutes.
- Top the chicken breasts with shredded Jack cheese.
- Transfer the skillet to the oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
