- 2 (8-ounce) packages cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 (10-ounce) can Rotel tomatoes with green chilies, drained
- 1 (15-ounce) can refried beans
- 1 tablespoon taco seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/2 cup sliced green onions
- Tortilla chips, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, blend the softened cream cheese and sour cream until smooth.
- Add the drained Rotel tomatoes, refried beans, and taco seasoning to the bowl, and stir until well combined.
- Sprinkle in the garlic powder, onion powder, paprika, cumin, and black pepper; mix until evenly distributed.
- Gently fold in 1 cup of shredded cheddar cheese and half of the sliced green onions.
- Pour the mixture into a baking dish, spreading it evenly.
- Top with the remaining cup of shredded cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Once baked, remove from the oven and let it cool slightly.
- Garnish with the remaining green onions and serve with tortilla chips.
Notes
Feel free to use low-fat cream cheese or Greek yogurt for a healthier option or substitute different types of cheese for unique flavors.
