Description

Ingredients

  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 (10-ounce) can Rotel tomatoes with green chilies, drained
  • 1 (15-ounce) can refried beans
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/2 cup sliced green onions
  • Tortilla chips, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, blend the softened cream cheese and sour cream until smooth.
  3. Add the drained Rotel tomatoes, refried beans, and taco seasoning to the bowl, and stir until well combined.
  4. Sprinkle in the garlic powder, onion powder, paprika, cumin, and black pepper; mix until evenly distributed.
  5. Gently fold in 1 cup of shredded cheddar cheese and half of the sliced green onions.
  6. Pour the mixture into a baking dish, spreading it evenly.
  7. Top with the remaining cup of shredded cheddar cheese.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Once baked, remove from the oven and let it cool slightly.
  10. Garnish with the remaining green onions and serve with tortilla chips.

Notes

Feel free to use low-fat cream cheese or Greek yogurt for a healthier option or substitute different types of cheese for unique flavors.
