- 1 lb boneless, skinless chicken, cut into pieces
- 1 cup basmati rice
- 2 tablespoons turmeric powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the oil: In a large pot, heat the olive oil over medium heat.
- Sauté the onion: Add the chopped onion and sauté until it turns translucent, about 3-5 minutes.
- Add garlic and turmeric: Stir in the minced garlic and turmeric. Cook for another minute until fragrant.
- Brown the chicken: Toss in the chicken pieces, seasoning with salt and pepper. Cook until the chicken is browned on all sides.
- Incorporate rice and broth: Add the basmati rice and chicken broth to the pot. Bring to a boil.
- Simmer: Reduce the heat, cover, and let it simmer for about 20 minutes or until the rice has absorbed the liquid and is tender.
- Fluff and serve: Once cooked, fluff the rice with a fork, garnish with fresh cilantro, and serve hot.
Notes
For a richer flavor, feel free to substitute with bone-in chicken or use vegetable broth for a vegetarian version. Rinse the basmati rice before cooking for a fluffier texture.
