  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream or full-fat coconut milk (for a dairy-free option)
  • 1/4 cup grated parmesan cheese
  • 2 (15 oz) cans of butter beans, drained and rinsed
  • 2 cups baby spinach
  • Salt and black pepper, to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion, cooking for about 3–4 minutes until soft and translucent.
  3. Stir in the minced garlic and red pepper flakes (if using), cooking just until fragrant, about 30 seconds.
  4. Add the chopped sun-dried tomatoes and stir for 1 minute to extract their flavors.
  5. Pour in the vegetable broth, scraping up any browned bits from the skillet, and let it simmer for 2–3 minutes until slightly reduced.
  6. Lower the heat and incorporate the cream and parmesan, stirring until you have a smooth and creamy sauce. Allow it to simmer for an additional 2–3 minutes to thicken.
  7. Mix in the drained butter beans, coating them well with the sauce. Let it simmer gently for 5–7 minutes until heated through.
  8. Fold in the baby spinach and cook just until wilted, about 1–2 minutes. Season with salt and pepper to taste.
  9. Garnish with fresh basil and additional parmesan. Serve warm and enjoy!

Notes

For a dairy-free option, substitute heavy cream with coconut milk. Adjust red pepper flakes for desired spice level.
