- 1/2 cup sun-dried tomatoes, chopped (oil-packed and drained)
- 1/2 cup vegetable broth
- 1/2 cup heavy cream or full-fat coconut milk (for a dairy-free option)
- 1/4 cup grated parmesan cheese
- 2 (15 oz) cans of butter beans, drained and rinsed
- 2 cups baby spinach
- Salt and black pepper, to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion, cooking for about 3–4 minutes until soft and translucent.
- Stir in the minced garlic and red pepper flakes (if using), cooking just until fragrant, about 30 seconds.
- Add the chopped sun-dried tomatoes and stir for 1 minute to extract their flavors.
- Pour in the vegetable broth, scraping up any browned bits from the skillet, and let it simmer for 2–3 minutes until slightly reduced.
- Lower the heat and incorporate the cream and parmesan, stirring until you have a smooth and creamy sauce. Allow it to simmer for an additional 2–3 minutes to thicken.
- Mix in the drained butter beans, coating them well with the sauce. Let it simmer gently for 5–7 minutes until heated through.
- Fold in the baby spinach and cook just until wilted, about 1–2 minutes. Season with salt and pepper to taste.
- Garnish with fresh basil and additional parmesan. Serve warm and enjoy!
Notes
For a dairy-free option, substitute heavy cream with coconut milk. Adjust red pepper flakes for desired spice level.
