- 1 pound Italian sausage (mild or spicy)
- 4 medium potatoes (Russet or Yukon Gold, diced)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 6 cups chicken broth
- 1 bunch kale (chopped, about 4 cups)
- 1 cup heavy cream (or half-and-half)
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper (to taste)
- Olive oil (for sautéing)
Instructions
- Sauté the sausage: Heat olive oil in a pot over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Cook the aromatics: Add the onion and sauté for 3-4 minutes until softened. Stir in garlic and cook for an additional minute.
- Add potatoes and broth: Toss in diced potatoes and pour in chicken broth. Bring to a boil, then reduce to simmer. Cook for about 15 minutes or until potatoes are tender.
- Incorporate kale and spices: Add kale and, if desired, red pepper flakes. Stir well and cook for another 5 minutes.
- Finish with cream: Lower heat and stir in heavy cream. Season with salt and pepper, warming through for another 2-3 minutes.
- Serve: Ladle soup into bowls and serve hot, preferably with crusty bread.
Notes
For added richness, use homemade or low-sodium chicken broth. Mix sausage types for a balanced flavor.
