Description

Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 4 medium potatoes (Russet or Yukon Gold, diced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped, about 4 cups)
  • 1 cup heavy cream (or half-and-half)
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper (to taste)
  • Olive oil (for sautéing)

Instructions

  1. Sauté the sausage: Heat olive oil in a pot over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  2. Cook the aromatics: Add the onion and sauté for 3-4 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Add potatoes and broth: Toss in diced potatoes and pour in chicken broth. Bring to a boil, then reduce to simmer. Cook for about 15 minutes or until potatoes are tender.
  4. Incorporate kale and spices: Add kale and, if desired, red pepper flakes. Stir well and cook for another 5 minutes.
  5. Finish with cream: Lower heat and stir in heavy cream. Season with salt and pepper, warming through for another 2-3 minutes.
  6. Serve: Ladle soup into bowls and serve hot, preferably with crusty bread.

Notes

For added richness, use homemade or low-sodium chicken broth. Mix sausage types for a balanced flavor.
