- 4 slices thick-cut bacon
- 2 large eggs
- 2 slices cheddar or American cheese
- 2 brioche buns (or substitute with English muffins, bagels, or toast)
- 1 tablespoon butter
- 1 tablespoon mayonnaise (optional)
- 1/2 avocado, sliced (optional)
- 1 teaspoon hot sauce (optional)
- 1 teaspoon honey or maple syrup (optional)
- 1 handful baby spinach or arugula (optional)
Instructions
- Heat a skillet over medium heat and cook the bacon until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess grease.
- Spread butter on the inside of the brioche buns and toast them in the skillet until golden brown, approximately 1-2 minutes.
- In a clean non-stick pan, heat a small amount of butter and crack the eggs. You can cook them sunny-side up, over-easy, or scrambled, seasoning with salt and pepper. Top with cheese to let it melt.
- If using, spread mayonnaise on the bottom bun. Layer with bacon, cheesy eggs, and optional toppings like sliced avocado or greens. Gently press the top bun down.
- Serve warm, accompanied by sides like crispy hash browns or fresh fruit for a balanced breakfast.
Notes
For a spicy twist, try adding jalapeño slices or using flavored cream cheese instead of mayonnaise.
