Description

Ingredients

  • 4 slices thick-cut bacon
  • 2 large eggs
  • 2 slices cheddar or American cheese
  • 2 brioche buns (or substitute with English muffins, bagels, or toast)
  • 1 tablespoon butter
  • 1 tablespoon mayonnaise (optional)
  • 1/2 avocado, sliced (optional)
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • 1 handful baby spinach or arugula (optional)

Instructions

  1. Heat a skillet over medium heat and cook the bacon until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess grease.
  2. Spread butter on the inside of the brioche buns and toast them in the skillet until golden brown, approximately 1-2 minutes.
  3. In a clean non-stick pan, heat a small amount of butter and crack the eggs. You can cook them sunny-side up, over-easy, or scrambled, seasoning with salt and pepper. Top with cheese to let it melt.
  4. If using, spread mayonnaise on the bottom bun. Layer with bacon, cheesy eggs, and optional toppings like sliced avocado or greens. Gently press the top bun down.
  5. Serve warm, accompanied by sides like crispy hash browns or fresh fruit for a balanced breakfast.

Notes

For a spicy twist, try adding jalapeño slices or using flavored cream cheese instead of mayonnaise.
