Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, sift together the gluten-free flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the sugar, Greek yogurt, vegetable oil, espresso powder, coffee, eggs, and vanilla extract until well combined.
- Gradually fold the wet ingredients into the dry mixture until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pans for about 10 minutes, then transfer to a wire rack to cool completely.
- While the cake cools, prepare the frosting by beating the butter until creamy, then gradually mix in the powdered sugar, cocoa powder, milk, and espresso powder until light and fluffy.
- Once the cakes are completely cooled, assemble by placing one layer on a serving platter, spreading a generous amount of frosting, topping with the second layer, and frosting the top and sides of the cake as desired.
