Quick and delicious chicken enchiladas perfect for busy weeknights or family gatherings.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour tortillas
- 1/2 cup diced onions (optional)
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, half of the shredded cheese, enchilada sauce, and optional onions. Mix well until combined.
- Place a generous portion of the chicken mixture into each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.
- Pour any remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
- Bake in the preheated oven for about 25 minutes, or until the enchiladas are heated through and the cheese is bubbly and golden.
- Once out of the oven, garnish with fresh cilantro if desired and serve hot.
Notes
For a spicy kick, add diced jalapeños or use different cheese blends for unique flavors.
