Description

Quick and delicious chicken enchiladas perfect for busy weeknights or family gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, half of the shredded cheese, enchilada sauce, and optional onions. Mix well until combined.
  3. Place a generous portion of the chicken mixture into each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.
  4. Pour any remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
  5. Bake in the preheated oven for about 25 minutes, or until the enchiladas are heated through and the cheese is bubbly and golden.
  6. Once out of the oven, garnish with fresh cilantro if desired and serve hot.

Notes

For a spicy kick, add diced jalapeños or use different cheese blends for unique flavors.
