  • Total Time: 15 minutes
  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

A quick and easy recipe to elevate canned soup with fresh vegetables and herbs.

Ingredients

Scale
  • 1 can of soup (any variety)
  • 1 cup fresh vegetables (like carrots, spinach, or bell peppers)
  • 1/4 cup fresh herbs (parsley, cilantro, or basil)
  • Salt and pepper to taste
  • Optional: 1 serving of cooked protein (such as chicken or tofu)

Instructions

  1. Open your can of soup and pour it into a medium pot.
  2. Toss in your chopped fresh vegetables and stir gently to combine.
  3. Place the pot on the stove over medium heat, stirring occasionally until the soup is heated and the vegetables have softened—about 5 to 10 minutes.
  4. Stir in your fresh herbs and season with salt and pepper as desired.
  5. If you’d like, mix in your choice of cooked protein for a more filling meal.
  6. Ladle the soup into bowls and enjoy!

Notes

Feel free to mix and match your vegetables and herbs based on what’s in season or on hand. Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months.
