  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)
  • Freeze-dried raspberries (optional)
  • Chocolate squares (optional)
  • Heart sprinkles (optional)
  • Melted white chocolate for drizzling (optional)

Instructions

  1. Prepare Each Dough Flavor: In two separate bowls, cream the softened butter and sugars until fluffy. Add the egg and vanilla, mixing well.
  2. Incorporate Dry Ingredients: For the chocolate dough, stir in flour, cocoa powder, baking soda, salt, and optional espresso powder. For the pink dough, mix in all-purpose flour, baking soda, salt, and raspberry powder or food coloring.
  3. Chill the Dough: Cover both doughs and chill for 30 minutes in the refrigerator.
  4. Scoop and Shape: Preheat your oven to 350°F (175°C). Scoop the dough into balls and place them on baking sheets. Create a well in the center of each ball.
  5. Bake: Bake for about 10–12 minutes, then re-press the centers of the cookies while they are still warm. Allow the cookies to cool completely.
  6. Make the Ganache: Heat the cream until it just begins to simmer. Pour it over the chopped chocolate, stirring until smooth. Optionally, add butter to make it extra creamy.
  7. Fill and Decorate: Fill the cooled cookie centers with ganache and top with sprinkles, freeze-dried raspberries, or drizzled white chocolate.
