- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until combined.
- In another bowl, beat the eggs, then mix in the milk and vanilla extract until well blended.
- Gradually add the wet ingredients to the dry mixture, stirring gently until just combined. Be careful not to overmix.
- Heat the vegetable oil in a deep skillet or pot to 350°F (175°C).
- Using a spoon, drop spoonfuls of the batter into the hot oil. Fry each beignet for about 2-3 minutes, or until they turn a beautiful golden brown on both sides.
- Once cooked, remove the beignets and let them drain on a paper towel. Finally, dust them generously with powdered sugar before serving.
