- 1/2 cup cocoa powder
- 1/4 cup maple syrup (or agave syrup)
- 1/2 cup almond milk (or any plant-based milk)
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a saucepan, whisk together cocoa powder, maple syrup, cornstarch, and a pinch of salt until combined.
- Gradually add the almond milk, whisking continuously to prevent lumps.
- Place the saucepan over medium heat and stir constantly until the mixture thickens and bubbles gently.
- Once thickened, remove from heat and stir in vanilla extract.
- Pour the pudding into individual serving cups and refrigerate for at least 2 hours before serving.
Notes
For variety, top with fresh berries, dairy-free whipped cream, or nuts. Store in an airtight container in the fridge for up to 5 days.
