Ingredients

  • 1/4 cup maple syrup (or agave syrup)
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a saucepan, whisk together cocoa powder, maple syrup, cornstarch, and a pinch of salt until combined.
  2. Gradually add the almond milk, whisking continuously to prevent lumps.
  3. Place the saucepan over medium heat and stir constantly until the mixture thickens and bubbles gently.
  4. Once thickened, remove from heat and stir in vanilla extract.
  5. Pour the pudding into individual serving cups and refrigerate for at least 2 hours before serving.
