Ingredients

  • 1 lb green beans, trimmed and cut into 1” pieces
  • 2 tablespoons vegan butter
  • 8 oz package baby portobello mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups unsweetened, unflavored non-dairy milk (such as almond or oat milk)
  • 1/2 cup vegetable broth
  • 1 teaspoon soy sauce
  • 1 package (6 oz) French crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan lined with a steamer basket, add the trimmed green beans and steam for 5-7 minutes until fork tender.
  3. Meanwhile, melt the vegan butter in a large skillet over medium-high heat.
  4. Add the chopped mushrooms and sauté for about 5 minutes until they start to soften.
  5. Stir in the minced garlic and cook for another minute until fragrant.
  6. Sprinkle the flour evenly over the mixture and stir until the flour is fully absorbed by the mushrooms.
  7. Gradually add the non-dairy milk, vegetable broth, and soy sauce, stirring constantly. Bring the mixture to a gentle simmer for 5 minutes, allowing it to thicken slightly.
  8. Stir in the steamed green beans and 1/3 cup of the French crispy fried onions. If your skillet isn’t oven-safe, transfer everything to an 8×8 inch baking dish.
  9. Top with the remaining crispy fried onions and bake for 11-15 minutes or until bubbly.
  10. Allow it to cool for 5 minutes before serving, and then enjoy!

Notes

Consider adding sautéed onions for enhanced flavor or blend non-dairy milk with soaked cashews for creaminess.
