Ingredients

  • 1 package of vegan puff pastry
  • 1 cup fresh strawberries, diced
  • 1 cup coconut cream or vegan cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg substitute (optional, for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the vegan puff pastry on a floured surface and cut it into rectangles.
  3. In a bowl, mix coconut cream or vegan cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
  4. Place a spoonful of the cream mixture on one half of each pastry rectangle and top with diced strawberries.
  5. Fold the pastry over to create a pocket and seal the edges. Brush with an egg substitute if desired.
  6. Place on a baking sheet and bake for 15-20 minutes or until golden brown.
  7. Let cool slightly, then serve with extra strawberries and mint leaves on top if desired.

Notes

To keep danishes fresh, store in an airtight container. Can refrigerate for up to 3 days or freeze unbaked for a month.
