- 1 package of vegan puff pastry
- 1 cup fresh strawberries, diced
- 1 cup coconut cream or vegan cream cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 egg substitute (optional, for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the vegan puff pastry on a floured surface and cut it into rectangles.
- In a bowl, mix coconut cream or vegan cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
- Place a spoonful of the cream mixture on one half of each pastry rectangle and top with diced strawberries.
- Fold the pastry over to create a pocket and seal the edges. Brush with an egg substitute if desired.
- Place on a baking sheet and bake for 15-20 minutes or until golden brown.
- Let cool slightly, then serve with extra strawberries and mint leaves on top if desired.
Notes
