- 3 cups mashed sweet potatoes
- 1/2 cup coconut milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup pecans, chopped
- 1/2 cup rolled oats
- 2 tbsp brown sugar
- 2 tbsp coconut oil, melted
- Salt to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
- Spread the sweet potato mixture evenly in a baking dish.
- In another bowl, mix pecans, rolled oats, brown sugar, and melted coconut oil.
- Sprinkle the pecan mixture over the sweet potato layer.
- Bake for 30-35 minutes until the top is golden and crunchy.
- Serve warm as a side dish.
