Ingredients
- Corn tortillas
- Black beans (mashed)
- Avocado (for serving)
- Corn (fresh or canned)
- Bell pepper (diced)
- Onion (diced)
- Garlic powder
- Cumin
- Salt
- Pepper
- Lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, mash your black beans until smooth, then mix in corn, diced bell pepper, onion, garlic powder, cumin, lime juice, salt, and pepper.
- Take a corn tortilla and place a spoonful of the filling in the center. Roll it tightly and place seam-side down on a baking sheet lined with parchment paper.
- Repeat for all tortillas, placing them closely but not touching.
- Bake for 15-20 minutes or until the tortillas are crispy and golden brown.
Notes
For added crunch, spray or brush the taquitos with olive oil before baking. You can keep leftover taquitos in an airtight container for 3-4 days.
