Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups vegetable broth
  • 8 ounces eggless noodles
  • 1 cup green beans, trimmed and cut
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent.
  3. Toss in sliced carrots and celery, cooking for about 5 minutes.
  4. Pour in the vegetable broth, bringing it all to a boil.
  5. Add the eggless noodles and green beans, then simmer until the noodles are tender, about 5-7 minutes.
  6. Stir in the spinach and let it wilt.
  7. Season with salt and pepper to taste.
