- 8 ounces eggless noodles
- 1 cup green beans, trimmed and cut
- 1 cup spinach
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic; sauté until translucent.
- Toss in sliced carrots and celery, cooking for about 5 minutes.
- Pour in the vegetable broth, bringing it all to a boil.
- Add the eggless noodles and green beans, then simmer until the noodles are tender, about 5-7 minutes.
- Stir in the spinach and let it wilt.
- Season with salt and pepper to taste.
