  • Fresh ginger
  • Garlic
  • Onion
  • Fish sauce
  • Soy sauce

  • Lime
  • Bean sprouts
  • Green onions

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Sauté ginger, garlic, and onion until fragrant and golden.
  2. Add the chicken to the pot and cook until browned on all sides.
  3. Pour in the chicken broth, increase heat, and bring everything to a boil.
  4. Stir in fish sauce and soy sauce to enhance the flavor.
  5. Reduce heat and let it simmer until the chicken is cooked through, about 15-20 minutes.
  6. Remove the chicken, shred using two forks, and return it to the pot.
  7. Add the egg noodles and cook until tender, roughly 3-5 minutes.
  8. Ladle the soup into bowls and garnish with fresh herbs, lime wedges, bean sprouts, and sliced green onions.
