Ingredients
- Chicken (breast or thigh)
- Egg noodles

- Fresh ginger

Instructions
- In a large pot, heat a splash of oil over medium heat. Sauté ginger, garlic, and onion until fragrant and golden.
- Add the chicken to the pot and cook until browned on all sides.
- Pour in the chicken broth, increase heat, and bring everything to a boil.
- Stir in fish sauce and soy sauce to enhance the flavor.
- Reduce heat and let it simmer until the chicken is cooked through, about 15-20 minutes.
- Remove the chicken, shred using two forks, and return it to the pot.
- Add the egg noodles and cook until tender, roughly 3-5 minutes.
- Ladle the soup into bowls and garnish with fresh herbs, lime wedges, bean sprouts, and sliced green onions.
