Ingredients

- 1 pound chicken breast
- 4 cups chicken broth
- 1 package rice noodles
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2–3 green onions, chopped
- Fresh herbs (cilantro, basil)
- Soy sauce to taste
- Salt and pepper to taste
Instructions
- In a pot, heat a little oil over medium heat.
- Sauté the sliced onion, minced garlic, and sliced ginger until they become fragrant.
- Add the chicken breasts and pour in the chicken broth. Bring to a boil.
- Lower the heat and let it simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it with two forks before returning it to the soup.
- Add the rice noodles and cook according to package instructions until they are tender.
- Season the soup with soy sauce, salt, and pepper to your liking.
- Serve hot, garnished with chopped green onions and a sprinkle of fresh herbs.
Notes
For a lighter version, substitute chicken broth with vegetable broth. Optional toppings include sliced jalapeños or a drizzle of Sriracha for spice.
