Description

Ingredients

  • 1 pound chicken breast
  • 4 cups chicken broth
  • 1 package rice noodles
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 23 green onions, chopped
  • Fresh herbs (cilantro, basil)
  • Soy sauce to taste
  • Salt and pepper to taste

Instructions

  1. In a pot, heat a little oil over medium heat.
  2. Sauté the sliced onion, minced garlic, and sliced ginger until they become fragrant.
  3. Add the chicken breasts and pour in the chicken broth. Bring to a boil.
  4. Lower the heat and let it simmer for about 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it with two forks before returning it to the soup.
  6. Add the rice noodles and cook according to package instructions until they are tender.
  7. Season the soup with soy sauce, salt, and pepper to your liking.
  8. Serve hot, garnished with chopped green onions and a sprinkle of fresh herbs.

Notes

For a lighter version, substitute chicken broth with vegetable broth. Optional toppings include sliced jalapeños or a drizzle of Sriracha for spice.
