Ingredients

- Refried beans (canned or homemade)

- Diced tomatoes or fresh pico de gallo
- Onions and bell peppers (optional)
- Seasoning (such as cumin, chili powder, salt, and pepper)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the protein in a skillet over medium heat. Drain any excess fat and season as desired.
- Warm the tortillas briefly in a pan or microwave to make them pliable.
- Spread a layer of refried beans onto each tortilla, followed by the cooked meat or beans, and a sprinkle of cheese.
- Roll the tortillas tightly, tucking in the ends as you go.
- Place the burritos seam-side down in a baking dish. Pour enchilada sauce over the rolls, then sprinkle more cheese on top.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
Notes
For extra flavor, consider marinating your protein overnight in taco seasoning. You can customize toppings with sour cream, guacamole, or fresh cilantro.
