Description

A hearty and creamy White Chicken Chili that is easy to prepare and perfect for chilly evenings and family gatherings.


Ingredients

  • 1 lb shredded chicken (rotisserie chicken works great!)
  • 1 can (15 oz) white beans (such as cannellini or great northern)
  • 1 can (4 oz) diced green chilies
  • 1 cup corn (frozen or canned)
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot or slow cooker, toss together the shredded chicken, white beans, diced green chilies, corn, and chicken broth.
  2. Add cumin, garlic powder, salt, and pepper, stirring well to combine.
  3. If using the stovetop, bring the mixture to a simmer over medium heat. For a slow cooker, set it on low for 4-6 hours.
  4. Once heated through, mix in the cream cheese until it melts and blends smoothly into the chili.
  5. Serve hot, topped with freshly chopped cilantro.

Notes

Consider adding diced jalapeños or a sprinkle of cayenne pepper for some heat. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
