A hearty and creamy White Chicken Chili that is easy to prepare and perfect for chilly evenings and family gatherings.
Ingredients

- 1 lb shredded chicken (rotisserie chicken works great!)
- 1 can (15 oz) white beans (such as cannellini or great northern)
- 1 can (4 oz) diced green chilies
- 1 cup corn (frozen or canned)
- 8 oz cream cheese
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot or slow cooker, toss together the shredded chicken, white beans, diced green chilies, corn, and chicken broth.
- Add cumin, garlic powder, salt, and pepper, stirring well to combine.
- If using the stovetop, bring the mixture to a simmer over medium heat. For a slow cooker, set it on low for 4-6 hours.
- Once heated through, mix in the cream cheese until it melts and blends smoothly into the chili.
- Serve hot, topped with freshly chopped cilantro.
Notes
Consider adding diced jalapeños or a sprinkle of cayenne pepper for some heat. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
