- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced green chilies
- 4 cups chicken broth
- 1 cup heavy cream or Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Chopped cilantro for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until soft and fragrant.
- Stir in the shredded chicken, white beans, corn, and diced green chilies. Add cumin, chili powder, salt, and pepper to taste.
- Pour in the chicken broth and bring everything to a gentle simmer.
- Allow the chili to cook for about 20 minutes, stirring occasionally.
- Stir in the heavy cream or Greek yogurt and let it cook for an additional 5 minutes.
- Serve hot, garnished with chopped cilantro.
Notes
For a lighter option, substitute Greek yogurt for heavy cream. Use rotisserie chicken to cut down on prep time. Adjust the chili’s thickness by adding more broth or cream.
