Description

Ingredients

  • 1.5 pounds boneless, skinless chicken breast
  • 2 cans of cannellini or great northern beans
  • 4 cups chicken broth
  • 1 can diced green chiles
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 8 ounces cream cheese
  • Optional toppings: cilantro, avocado, cheese

Instructions

  1. Season the chicken breasts with cumin, chili powder, and salt.
  2. In the crockpot, add chicken broth, beans, diced green chiles, onion, garlic, and seasoned chicken. Stir gently to mix.
  3. Cover and cook on low for 6 to 8 hours or high for about 4 hours.
  4. Once the chicken is cooked through, remove it from the pot, shred it with two forks, and return it to the chili.
  5. Stir in cream cheese until melted and well-blended.
  6. Taste and adjust seasoning if needed, then serve hot.

Notes

For a lighter version, you can substitute Greek yogurt for cream cheese. For extra heat, add jalapeños or more green chiles.
