- 1.5 pounds boneless, skinless chicken breast
- 2 cans of cannellini or great northern beans
- 4 cups chicken broth
- 1 can diced green chiles
- 1 chopped onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 8 ounces cream cheese
- Optional toppings: cilantro, avocado, cheese
Instructions
- Season the chicken breasts with cumin, chili powder, and salt.
- In the crockpot, add chicken broth, beans, diced green chiles, onion, garlic, and seasoned chicken. Stir gently to mix.
- Cover and cook on low for 6 to 8 hours or high for about 4 hours.
- Once the chicken is cooked through, remove it from the pot, shred it with two forks, and return it to the chili.
- Stir in cream cheese until melted and well-blended.
- Taste and adjust seasoning if needed, then serve hot.
Notes
For a lighter version, you can substitute Greek yogurt for cream cheese. For extra heat, add jalapeños or more green chiles.
