- 1 lb cooked shredded chicken
- 1 can white beans (cannellini or great northern)
- 1 can corn (drained)
- 1 can diced green chilies
- 1 onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup heavy cream or milk
- Fresh cilantro (for garnish)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
- Introduce the shredded chicken, white beans, corn, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Allow it to simmer for about 20 minutes, giving the spices time to meld.
- Stir in the heavy cream or milk just before serving for that creamy texture.
- Garnish with fresh cilantro.
Notes
For extra flavor, consider adding lime juice just before serving or diced jalapeños for some heat. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
