Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 medium onion, diced
  • 2 small cans green chilies, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can full-fat coconut milk
  • Spices: cumin, chili powder, and oregano

Instructions

  1. In a large pot over medium heat, sauté the diced onion until translucent, then add the minced garlic. Cook for another minute until fragrant.
  2. Add the diced chicken breast to the pot, cooking until lightly browned on all sides.
  3. Mix in the green chilies and any spices you’re using, stirring for about a minute to blend the flavors.
  4. Pour in the rinsed white beans, followed by the chicken broth. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld beautifully.
  6. Stir in the coconut milk just before serving, allowing it to heat through.
