- 1 pound chicken breast, diced
- 2 cans white beans, drained and rinsed
- 1 medium onion, diced
- 2 small cans green chilies, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can full-fat coconut milk
- Spices: cumin, chili powder, and oregano
Instructions
- In a large pot over medium heat, sauté the diced onion until translucent, then add the minced garlic. Cook for another minute until fragrant.
- Add the diced chicken breast to the pot, cooking until lightly browned on all sides.
- Mix in the green chilies and any spices you’re using, stirring for about a minute to blend the flavors.
- Pour in the rinsed white beans, followed by the chicken broth. Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld beautifully.
- Stir in the coconut milk just before serving, allowing it to heat through.
