- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
- In the same pot, add the onion and garlic, sautéing until softened.
- Stir in the tomato paste and cook for another minute.
- Return the beef to the pot and add the broth, carrots, potatoes, Worcestershire sauce, thyme, salt, pepper, and bay leaf.
- Bring to a boil, then reduce the heat to low and cover.
- Simmer for 120 to 180 minutes, until the beef is tender.
- Serve hot and enjoy your bewitching dinner!
