Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
  2. In the same pot, add the onion and garlic, sautéing until softened.
  3. Stir in the tomato paste and cook for another minute.
  4. Return the beef to the pot and add the broth, carrots, potatoes, Worcestershire sauce, thyme, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce the heat to low and cover.
  6. Simmer for 120 to 180 minutes, until the beef is tender.
  7. Serve hot and enjoy your bewitching dinner!

Serve with crusty bread or over rice; can add fresh herbs for garnish.
