Description
A quick and delicious bread option for low-carb diets, made with eggs and Greek yogurt, perfect for breakfast or as a side dish.

- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (preferably aluminum-free)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat your oven to 350°F (175°C). Prepare your loaf pan by lining it with parchment paper or greasing it generously.
- In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until everything is smooth and creamy.
- Add the baking powder, salt, and xanthan gum (or psyllium husk powder) into the bowl. If using almond flour, add it at this stage too. Stir until the batter is well-combined and slightly thickened.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Place it in your preheated oven and bake for 35–45 minutes, until the top is golden and a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack. Let it cool completely before slicing.
Notes
To ensure a soft texture, allow the ingredients to come to room temperature before combining. You can use a hand mixer to make the batter ultra-smooth, but a whisk works just fine too!
