- 2 medium zucchinis, grated
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Toppings of your choice (suggestions: pepperoni, bell peppers, onions)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine grated zucchini, mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Stir until evenly mixed.
- On a parchment-lined baking sheet, spread the zucchini mixture evenly in a circular shape, about 1/4 inch thick.
- Bake for 15-20 minutes, or until the crust is golden brown and firm.
- Remove the crust from the oven and add your favorite toppings.
- Return to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Let it cool slightly, slice, and enjoy your healthier pizza!
Notes
For a dairy-free option, substitute cheese with nutritional yeast. Squeeze out excess moisture from zucchini before mixing to prevent a soggy crust.
