- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups peeled and diced Granny Smith apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients, alternating with the buttermilk, mixing until just combined.
- Fold in the diced Granny Smith apples with care.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for about 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before moving it to a wire rack to cool completely.
- Whisk together the powdered sugar and milk until smooth, then drizzle it over the cooled loaf.
Notes
Best served warm with coffee or tea. Can be stored at room temperature for up to three days in an airtight container.
