- 1 1/2 teaspoons cornstarch
- 1/3 cup all-purpose flour
- 1/3 cup light brown sugar
- 1/3 cup quick-cooking oats
- 3/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 2 1/2 tablespoons unsalted butter, melted
- Caramel sauce for serving
Instructions
- Preheat your oven to 325°F and line a standard cupcake pan with paper liners.
- Mix graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until blended, then press 2 tablespoons of the mixture into each liner and chill.
- For the streusel, combine flour, brown sugar, oats, cinnamon, and nutmeg. Mix in melted butter until coarse crumbs form, then refrigerate.
- Beat softened cream cheese with sugar, vanilla, and flour until smooth. Add egg and mix gently.
- Remove crusts from refrigerator and spoon cheesecake filling into each, filling two-thirds full.
- Toss chopped apples with lemon juice, brown sugar, cornstarch, cinnamon, and nutmeg, then spoon into cheesecake cups.
- Sprinkle streusel topping over each cheesecake.
- Bake for 28-30 minutes, or until edges are set. Cool in pan for 30 minutes and then refrigerate.
- Serve chilled, drizzled with caramel sauce.
Notes
For an elegant touch, drizzle with caramel sauce before serving. Can be stored in an airtight container in the refrigerator for up to a week.
