Ingredients

  • 2 teaspoons all-purpose flour
  • 1 egg
  • 2 medium-small apples, peeled and chopped finely
  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for serving

Instructions

  1. Preheat your oven to 325°F and line a standard cupcake pan with paper liners.
  2. Mix graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until blended, then press 2 tablespoons of the mixture into each liner and chill.
  3. For the streusel, combine flour, brown sugar, oats, cinnamon, and nutmeg. Mix in melted butter until coarse crumbs form, then refrigerate.
  4. Beat softened cream cheese with sugar, vanilla, and flour until smooth. Add egg and mix gently.
  5. Remove crusts from refrigerator and spoon cheesecake filling into each, filling two-thirds full.
  6. Toss chopped apples with lemon juice, brown sugar, cornstarch, cinnamon, and nutmeg, then spoon into cheesecake cups.
  7. Sprinkle streusel topping over each cheesecake.
  8. Bake for 28-30 minutes, or until edges are set. Cool in pan for 30 minutes and then refrigerate.
  9. Serve chilled, drizzled with caramel sauce.

Notes

For an elegant touch, drizzle with caramel sauce before serving. Can be stored in an airtight container in the refrigerator for up to a week.
