Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup broccoli florets
  • 1 cup cooked rice (white or brown)
  • 1/2 cup carrots, shredded
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust for spice level)
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a skillet, heat a tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked.
  3. In a small bowl, mix the mayonnaise, sweet chili sauce, and Sriracha to make the Bang Bang sauce.
  4. Steam the broccoli and carrots for 3-4 minutes or until tender.
  5. Remove the cooked chicken from the skillet, let it rest, and then slice into bite-sized pieces.
  6. Assemble the bowl starting with a base of rice, topped with sliced chicken, steamed veggies, and bell pepper slices.
  7. Spoon the Bang Bang sauce over the top and garnish with green onions.
  8. Serve and enjoy!

Notes
