Ingredients

- 3 to 4 lbs chuck roast
- 2 cups low-sodium beef broth
- 4 large carrots, chopped
- 4 medium Yukon Gold potatoes, quartered
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 tsp fresh rosemary (or 1 tsp dried)
- Salt and pepper to taste
Instructions
- Prepare ingredients by chopping carrots and potatoes into large chunks. Slice the onion and mince the garlic.
- Generously season both sides of the chuck roast with salt and pepper.
- In a skillet over medium-high heat, sear the roast for about 3-4 minutes per side until browned.
- Layer the seared roast in the bottom of your crock pot, followed by carrots, potatoes, onions, and garlic. Sprinkle thyme and rosemary on top.
- Pour in enough beef broth to cover the vegetables while leaving some of the roast exposed.
- Cover and cook on low for 8 hours or high for 4 hours until tender.
Notes
For best results, let the roast rest for a few minutes after cooking before slicing. You can also make quick gravy from the cooking juices if desired.
