  • 2 large sweet potatoes (about 2 cups mashed)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup evaporated milk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat your oven to 350°F (175°C) and adjust your oven rack to the center position.
  2. Roast the sweet potatoes until they’re tender, then cool and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes with both sugars, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until silky.
  4. Roll out your pie crust and fit it into a 9-inch pie dish, crimping the edges for decoration.
  5. Pour the sweet potato filling into the crust and smooth the top.
  6. Bake for 55 to 60 minutes until set, and a toothpick comes out clean.
  7. Cool on a wire rack for at least 2 hours before slicing.
  8. Serve with whipped cream or vanilla ice cream.

Notes

For a dairy-free version, swap evaporated milk with coconut milk. For a unique twist, use allspice instead of nutmeg.
