  • 1 cup fresh blueberries (or frozen, thawed and drained)
  • ¼ cup cream cheese (softened) or shredded mild cheese (mozzarella or mild cheddar)
  • 2 tsp granulated sugar (or to taste)
  • ½ tsp vanilla extract (optional)
  • ¼ tsp ground cinnamon (optional)
  • 1 tbsp butter or oil for cooking
  • Optional toppings: maple syrup, honey, powdered sugar, fresh berries

Instructions

  1. If using frozen blueberries, ensure they’re completely thawed and drained of any excess liquid.
  2. In a small bowl, gently toss the blueberries with the granulated sugar, vanilla extract (if using), and cinnamon.
  3. Spread softened cream cheese on one half of a tortilla, or evenly sprinkle shredded cheese.
  4. Layer the cheese with the sweetened blueberries, then fold the tortilla in half.
  5. Heat butter or oil in a skillet over medium heat.
  6. Cook the folded quesadilla for about 2 to 3 minutes on each side until golden brown and crispy.
  7. Remove from heat, slice into wedges and serve with optional toppings.
