Description

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk (or buttermilk)
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually mix in the dry ingredients alternately with the milk, starting and ending with the flour mixture. Fold in blueberries gently.
  5. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  6. Pour half of the bread batter into the prepared loaf pan. Spread evenly, then add cream cheese filling. Top with remaining batter, spreading to cover the filling.
  7. Bake for 55-65 minutes until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too much.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
