- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk (or buttermilk)
- 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- 1 large egg (for filling)
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually mix in the dry ingredients alternately with the milk, starting and ending with the flour mixture. Fold in blueberries gently.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour half of the bread batter into the prepared loaf pan. Spread evenly, then add cream cheese filling. Top with remaining batter, spreading to cover the filling.
- Bake for 55-65 minutes until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too much.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
