  • 1 (14-ounce/400 ml) can coconut milk
  • 1 (14-ounce/400 g) can diced tomatoes, drained
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • Steamed rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté onion until translucent (about 3-4 minutes).
  3. Add garlic, cumin, paprika, and optional cayenne pepper; cook for 1 minute.
  4. Cook chicken cubes until browned on all sides (5-7 minutes).
  5. Season with salt and pepper.
  6. Pour in coconut milk and simmer for depth of flavor.
  7. Stir in diced tomatoes and lime juice; let simmer gently for 15-20 minutes.
  8. Finish with cilantro, adjust seasoning, and serve hot over steamed rice.

Notes

For a vegetarian option, substitute chicken with tofu or chickpeas. Adjust spice level by omitting cayenne pepper.
