Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add vanilla extract and mix until well combined.
- Gradually stir in the flour, chopped pecans, and salt until evenly mixed.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Bake for 12-15 minutes until the bottoms are lightly golden.
- Let them cool for a few minutes, then roll in powdered sugar while still warm.
- Transfer to a wire rack to cool completely, then roll again in powdered sugar before serving.
